Proper Storage

It's a surprise to me that chocolate can be stored . . . who keeps it that long? It's like the Garfield comic regarding his favorite treat: "Ice cream melts?"

If you do need to store the chocolate, though, be advised that it should be tightly wrapped and kept in a cool, dry place at about 70 degrees. If the chocolate gets too warm, you may notice a "bloom" on the surface, where it starts to turn white - even though it will still be okay to eat. You can keep chocolate in the fridge, although it's not the best place, since it can absorb other food odors.

Again, something that is foreign to me, is that chocolate improves with age. Really? Would you keep it around that long? If you would, squirrel it away at about about 60 degrees in an airtight container.

Chocolate-Caramel Calzones

Here's a link for a great recipe for Chocolate-Caramel Calzones: http://www.scharffenberger.com/RE1102.asp. You use ready-made pizza dough, so it's not as labor-intenstive as you might think. It won second place in the Scharffen Berger Chocolate Adventure Contest. I don't know about first place, though . . . that one's made with pomegranate and wasabi paste!

Chocolate and Dogs

I'd always heard that you shouldn't let your dog get near chocolate because it could kill him. I nearly had a heart attack myself when I found several empty chocolate wrappers on the floor one morning - and there were no kids in the house. After a frantic call to the vet, I was assured that our dogs were probably fine because it looked like they consumed milk chocolate, which has a smaller amount of theobromine (a stimulant found in the cocoa bean) than, say, dark or semi-sweet chocolate. In addition, they ate a relatively small amount compared to their size. Still, dogs should be kept away from this sweet stuff because it could still cause some pretty nasty reactions, such as vomiting, diarrhea, or hyperactivity.
